Now that the rush of back-to-school is mostly behind us and we’ve settled into a rhythm, I’ve been able to take a deep breath and start trying my best to catch back up. Or something. We never really do catch up, do we? Or maybe you do. I mostly tread water. Anywhoo… one thing that’s been making me twitch is breakfast time. I wish I had more healthy options that my kids will actually eat. Even just a few weeks into the school year, they’re already tired of the constant rotation of Cheerios, yogurt, and frozen waffles. My goal is to prep a new (somewhat healthy) breakfast recipe on Sundays so it’s ready for the week to mix things up a bit.
The best part? I’m having my kids choose what they want from the curated collection of recipes in this post. So once a week I’ll make what they want and they feel as though they had control over that decision. Takes the guesswork out of it for me and makes it exciting for them to have more choice.
I’m not saying I’m going to whip up a fruit rainbow egg concoction every morning such as the one featured in the top collage, but I now have 25 more breakfast ideas than I did yesterday so that’s what I call a win! And if the fruit rainbow sneaks in on a random Sunday morning, ah well. Got to live it up a bit, ya know? 😉
