Baking Night: Church Window Cookies

There’s some discussion whether these should be called cookies or candy.  Let’s call it what it really is: diabetes.  Whatever the name, they are yummy and super, duper sweet.  Really sweet.  Like when Will Ferrell put maple syrup on his sugar cereal in Elf sweet.  But they are fun and kids love them.  Okay, I love them too.

Church Window Cookies

INGREDIENTS:

1 12 oz. pkg. semi-sweet chocolate chips
1/4 lb. butter
1 c. chopped walnuts
1 10 oz. pkg. colored miniature marshmallows

DIRECTIONS:

1.  In a medium saucepan, combine the chocolate chips and butter and stir until melted.
2.  Let the mixture cool so the marshmallows don’t melt.  When cool, add in nuts and marshmallows.  Stir until the nuts and marshmallows are covered in chocolate.
3.  Sprinkle coconut on a sheet of waxed paper.  Spoon the chocolate mixture in a long strip onto the waxed paper.  Sprinkle more on top.  Wrap the log in the waxed paper and refrigerate until firm.  Slice and serve!

My husband said I should show you these, so you know what NOT to do.  I don’t know why he’s complaining; I call these mistakes “quitters” and he ate them in three seconds flat.  He’s right; it’s nice to know the pitfalls of a specific recipe.  These couldn’t really be avoided, though: they are from the ends of the roll.  Still yummy, but not pretty.  Here you go, my “quitters!”
