One of my biggest downfalls in my attempt to eat a healthy breakfast every morning has been finding QUICK (gluten-free and egg-free) breakfast ideas to ‘grab and go’. And by ‘grab and go’, I don’t mean coffee– which has been my typical breakfast for the past decade. Mornings are busy, and I needed something to eat that wouldn’t drag me down if I went on a run or hit the gym. My friend Nicky suggested I try no-bake energy balls, and in an act of serendipity my other friend Lauren happened to mention she makes them all the time, but has the most amazing name for them– wait for it– she calls them Amazeballs.

No really, is there a better name for these balls formerly known as ‘no-bake energy bites?’ I think not.

She was kind enough to share her blog post and recipe for them. With a few tweaks, we’ve developed a gluten-free version that everyone in the family loves and can be changed to add whatever we have on hand that day.

My absolute FAVORITE part about this recipe is you can add or subtract the add-in ingredients to change up the flavor:

  • For a decadent version, add in mini-chocolate chips or cocoa powder.
  • Need a protein boost? Add in your favorite protein powder!
  • For a trailmix theme, add dried cranberries and sunflower seeds.
  • Need to go nut-free? Substitute Sunbutter for the peanut butter and make sure the rest of your ingredients are nut-free (this varies by brand, triple check your ingredients to be extra sure!)
  • For a taste of fall, add in a sprinkle of cinnamon and pepitas (hulled pumpkin seeds.)

We have some coconut lovers in our house so we not only added it into the mixture but also rolled them in unsweetened coconut flakes for an extra boost of flavaaaaa.

Because I like to keep things as fresh and unprocessed as possible (ugh, yes, i’m one of THOSE people, wink!) we use local honey and fresh ground peanut butter that I grind at Whole Foods.

But the bestest of the best parts? They are super simple to make, and I can make them the night before. Mix, chill, form, done!

How to Make Amazeballs

Basic Ingredients

  • 1 cup rolled oats (I used gluten free)
  • 2/3 cup coconut flakes (I prefer unsweetened, toast them first to bring out flavor)
  • 1/2 cup peanut butter
  • 1/4 cup ground flax seeds
  • 1/3 cup honey (can use less if this amount is too sweet)
  • 1 teaspoon vanilla extract

Add-in or substitution ideas (sub in dry ingredients for dry, wet for wet, etc.):

  • mini-chocolate chips
  • pepitas
  • dried cranberries
  • raisins
  • sunflower seeds
  • Sunbutter, almond butter
  • Nutella
  • Agave instead of honey
  • cocoa powder or protein powder
  • wheat germ
  • chia seeds

Directions:

Step 1: Dump everything in a bowl.

Step 2: Mix together. (Not gonna lie, I used my hands… it was easier than trying to mix with a spoon.)

Step 3: Pop in the fridge for about 15 minutes so the mixture is easier to work with.

Step 4: Form into balls (I used a melon baller, but you can use a cookie scoop or just your hands) and store in the fridge so they maintain their shape better.
