This easy slow-cooker recipe for shredded salsa chicken– perfect for busy weeknights, because it only requires 5 minutes prep– started as a photo on Instagram but took on a life of its own. I got so many questions I decided it needed its own post. Truly this is one of the most delicious, simple, and versatile recipes you can make in your crockpot, and the 5 minutes you invested in making it will be soooooo worthwhile.
Unlike many slow-cooker recipes, no precooking is necessary. You dump in the ingredients, cook on high for a few hours, and when it’s ready the chicken is so tender it shreds with two forks.
Then you can serve it solo with your favorite side dish, in tortillas as tacos or quesadillas, or in taco shells for a crunchy bite. Heck, you could probably mix it in with omelets for breakfast or a casserole for dinner, it’s that versatile.
My biggest tip is to buy great salsa. I’ve made it with cheaper brands and it’s okay, but not spectacular. I used Whole Foods Organic Salsa for this round, but my rule of thumb is if you like the salsa, you’ll love the chicken– so go with a brand you really like. Another money-saving tip: this recipe is perfect for when you score salsa on a Buy One, Get One sale since you need two jars.

Easy + Delicious Slowcooker Chicken Recipe
Ingredients
- 2 jars salsa
- 1 lb boneless skinless chicken breast
- 1 can black beans drained
- 1 can corn drained (optional)
- Bread of Choice: tortillas, hoagie rolls, taco shells, etc.
Instructions
- Pour salsa, beans, and corn into the slowcooker insert.
- Add raw chicken, and make sure it’s coated with the salsa mixture.
- Heat on high for 4 hours or low for 6. May be done sooner, chicken is ready when it shreds easily with 2 forks.
- Serve in taco shells, warmed tortillas, in rolls, or as a main dish over rice.
