What fun it is to be a part of the SUMMER SALAD SERIES at Making Lemonade!! I am honored to pop over from Sondra Lyn at Home to share one of my favorites with you today!
Carrie had a wonderful idea to bring different salads to you this summer. I am one of those she talked about who easily suffers from Salad Boredom. When that happens, you can bet I’ll be in the mood for a fruit salad! Or if I need to satisfy my sweet tooth, I might turn to this salad instead of something decadent.
The ingredient that does sweeten this dish up a bit is homemade Blackberry Jam! My son-in-love has a granddad who makes the best, and he’s so kind to share!! Thanks, Big Daddy!
This is the fruit I used, but almost any in-season fruit would work:
Of course, also delicious would be mango, watermelon, peaches, grapes, banana… the possibilities are endless!
I used this technique and tool to core and slice the pineapple, and simply cut each fruit into bite-sized pieces. You could also scoop out melon balls instead of slicing the melon into chunks.
Here is the recipe just for you:
Fresh Fruit Salad with Blackberry Yogurt Glaze
Ingredients
- melon
- strawberries
- blueberries
- pineapple
- nectarines
- kiwi
- ½ cup pecans or walnuts chopped and toasted, (optional)
Glaze:
- 12 oz vanilla or plain yogurt
- 2 Tbsp blackberry jam
Instructions
- Chop fruit into bite-sized pieces.
- Combine yogurt and jam in small bowl.
- Pour yogurt mixture over fruit in mixing bowl and stir gently, being careful not to mash fruit.
- Pour into serving bowl. Top with nuts if desired.
- Enjoy!
