Are you ready for a totally on-trend seasonal drink recipe that’s perfect for fall?  Too bad, because *this* lazy blogger is only just now getting around to sharing the refreshing beverage recipe that I’ve been drinking all summer but only just now have time to post.  😉  SERIOUSLY you guys, I’m just not sure I’m going to make it to the first day of school next week.  Please come mop me up off the floor, these kids are fun but oh-so-exhausting!  That being said, we have perfect weather this week so here’s a delicious recipe to sip while you remember your favorite things about summer (or to pin for next year, I’ll understand).

Back in May while vacationing in the Outer Banks we ventured over to tiny Ocracoke Island.  That’s where I found a small cafe serving Rosemary Lemonade, so OF COURSE I had to try it.

It was delicious; classic lemonade with a twist.  The rosemary isn’t overpowering and the combination with the lemon makes this drink pair beautifully with other seasonal food (tomatoes, grilled chicken and salad, for example.)

If you have rosemary that’s ready to harvest, here’s a great way to use it!

Ingredients:

1 cup sugar

1 cup lemon juice (see recipe for ideas)

6 cups water

4-6 sprigs of rosemary

ice cubes

1.  Create a simple syrup.  In a small saucepan over medium heat, combine 1 1/2 cups water with 1 cup sugar.  Stir until dissolved.  Place rosemary in pan and stir again.  Set aside until cool.

2.  Squeeze the lemons.  Whenever I see lemons on sale, I buy a bag of them.  We take them home and the kids have a ball helping me roll them under our palms on the table (makes them juicier) and squeezing them with our old fashioned lemon squeezer.  We then freeze them in ice cube trays (and place the frozen cubes in a ziploc bag in the freezer) so we always have ‘fresh’ lemon juice on hand!  You’ll need 1 cup of lemon juice, which is about 12 frozen lemon juice cubes (or 5-7 lemons, depending on size).   3-year old boy who wants to use his muscles totally optional.

3.  Strain simple syrup and lemon juice into pitcher.  You can also skip straining and just discard the sprig, but I like to strain to remove bits and pieces.

4.  Add the rest of the water.  Stir in 4 1/2 cups cold water, or a little less and add lots of ice cubes when you serve it.  Chilly and refreshing!  I like to serve with a sprig of rosemary and/or lemon slices, but that’s just for looks.  And wow, it looks delicious.
