Hi there! I’m Christina from It’s a Keeper, a food and cooking blog where I test recipes to see if they’re (you guessed it…) keepers! Carrie has graciously let me take over Making Lemonade today and share one of my favorite summer salad recipes with you.

I cannot wait for strawberry season each year. It’s a very short season where I live and it often depends on the amount of rain and warm weather. Each year, I stalk our local strawberry farm to find out when the berries will be ready for picking.

Strawberry Salad with Poppyseed Dressing It's a keeper

I anxiously wait with my berry buckets all cleaned up and ready to be filled with those sweet little bursts of sunshine. I’m ready to go at a moment’s notice! Yeah, I’m that crazy about it!

As soon as I get home from the strawberry farm, I wash up some of my (still warm) berries and make this Strawberry Salad with Creamy Poppy Seed Dressing.

I love everything about this salad. It’s crunchy and sweet with a just a little tangy-ness. Sometimes, I even go crazy and add some grilled chicken. It makes a perfect lunch

This Strawberry Salad is also a big hit at parties. It’s so pretty and colorful and a fun alternative to a traditional garden salad. It’s also super easy to make.

Strawberry Salad with Poppyseed Dressing (Summer Salad Series)

Fresh strawberries add a bright burst to this leafy salad perfectly complimented by creamy poppyseed dressing.

Ingredients

Dressing:

Instructions

  • Tear lettuce into bite size pieces and place in a large bowl. Toss with sliced onion and strawberries.
  • In a small bowl, combine remaining ingredients for dressing. Whisk until smooth.
  • Dressing can be made ahead of time and refrigerated until needed.
  • I prefer to serve the salad dressing on the side and add it to each serving of salad individually.
