Ingredients

rolled oats
I used gluten free

coconut flakes
I prefer unsweetened, toast them first to bring out flavor

peanut butter
1/4

ground flax seeds
1/3
cup
honey
can use less if this amount is too sweet

teaspoon
vanilla extract
Add-in or substitution ideas (sub in dry ingredients for dry, wet for wet, etc.):
mini-chocolate chips
pepitas
dried cranberries
raisins
sunflower seeds
Sunbutter
almond butter
Nutella
Agave instead of honey
cocoa powder or protein powder
wheat germ
chia seeds
Instructions
Dump everything in a bowl.
Mix together. (Not gonna lie, I used my hands… it was easier than trying to mix with a spoon.)
Pop in the fridge for about 15 minutes so the mixture is easier to work with.
Form into balls (I used a melon baller, but you can use a cookie scoop or just your hands) and store in fridge so they maintain their shape better.
