Yes, I went there– I jumped aboard the salted caramel bandwagon and came up with a grilled S’mores recipe that will knock your socks off. Because S’mores. And Salted Caramel. And grilling season. Seriously, does life get better than this? In mere minutes you can put a few simple ingredients together and come up with the dessert that most epitomizes summer campfires, gatherings, and BBQs. Plus I figured out how to make S’mores on the grill for those of us who don’t have access to a firepit. You’re welcome. Just don’t blame me when the taste of perfectly salted caramel melts in with the marshmallow-y chocolate and graham crackers to create an addictive, messy, decadent dessert you might just crave through the long winter months as well. 😉
As if S’mores couldn’t get any better, the salted caramel creates a delicious layer that melds with the bottom graham cracker like a pie crust.

HOW TO MAKE GRILLED SALTED CARAMEL S’MORES
Step 1. I started with a pizza pan for the grill covered in foil, though I bet plain tinfoil on the grill would work as well. I laid out the graham crackers and caramel, and placed on the grill over medium heat until the caramel got a little softer.
Step 2. I then added marshmallows on skewers and placed them on the tinfoil. You can place them directly on the grill for a seared finish, or keep them on the pan for less mess (but you won’t get that toasted delicious crust this way). Remember to use heatproof potholders if using metal skewers!
Step 3. Sprinkle the caramel with sea salt. I love using Himalayan Sea Salt and my secret source for it is Homegoods, lol.
Step 4. Add the chocolate on top of the caramel and close the grill for a moment so the chocolate gets a little soft. Unskewer the marshmallows onto the chocolate, top with another graham cracker, smush down, and…

I’ll be honest, these were almost impossible to photograph because the kids were at my elbows waiting for their treats. Who am I to deny them a summer treat?! Next time I would probably use only one chocolate rectangle because they were so messy, but ah well. Finger licking good, I tell you.
