Equipment
- 1 Slow Cooker
- Knife
- Cutting Board
- Stand Mixer
Ingredients
- 4 pounds Sweet Potatoes peeled and diced into ½ inch cubes
- 3/4 cup Brown Sugar packed
- 1/4 cup Unsalted Butter melted
- 2 tsp Pumpkin Pie Spice
- 1 tsp Ground Cinnamon
- 1 tsp Salt
- 1 tsp Vanilla Extract
- 1 1/2 cups Mini Marshmallows
- 1 cup Pecans Whole
Instructions
- Spray crockpot with cooking spray.
- Clean and cut sweet potatoes and add to crockpot.
- In a medium bowl, whisk together brown sugar, butter, spices, salt and vanilla.
- Pour over sweet potatoes and stir to combine.
- Cover and cook on low for 7-8 hours or on high for 3-4 hours or until sweet potatoes are tender.
- Remove lid and mash sweet potatoes.
- Top with marshmallows.
- Cover with lid and continue cooking for 5-10 minutes to melt marshmallows.
- Sprinkle with pecans and serve immediately.
Notes
If you would like browned marshmallows, place insert of the crock pot into the oven at 375 degrees for 5-10 minutes, watching carefully.
