How to Make the Perfect Hard-Boiled Eggs
Start by placing your eggs in a single layer in a pot or saucepan so they cook evenly. Cover them with cold water, making sure the water sits about an inch above the eggs. Bring everything to a rolling boil over high heat, then turn off the heat, cover the pan, and let the eggs sit in the hot water for 10 to 12 minutes depending on how firm you like the yolks.
Once they are done, transfer the eggs to a large bowl of ice water to stop the cooking process and make peeling easier. Let them sit for a few minutes, then gently tap and peel the shell. Using slightly older eggs instead of super fresh eggs can also help the shells come off more easily. Store any peeled or unpeeled eggs in the refrigerator until you are ready to use them.
