YOU GUYS. I’ve *finally* discovered and put into action the secret to easier weeknight dinners– prepping them ahead. This isn’t rocket science, deep down I’ve known it for awhile, but actually doing it is another story. Most of us don’t have all day to prep dinner, especially if you’re a working parent like me, and between sports and homework the afterschool period is one of EVERLOVING INSANITY. One of my latest tricks for prepping healthy weeknight dinners with very little effort on my part is shredding a few rotisserie chickens from Costco and freezing them in smaller portions ahead of time. Then I pull them out the night before, defrost in the fridge, and we have chicken ready to use in a recipe for dinner the next night!
