Thaw puff pastry dough until it’s easy to roll out. Dust flour onto your work surface, and use a rolling pin to roll your puff pastry sheet into a 9×13 inch rectangle.
Preheat your oven to 400 deg F and line your baking sheet with parchment paper.
In a small bowl, make the egg wash by whisking together the egg and water. In a separate (small) bowl, combine the cinnamon and sugar.
Using a knife or pizza cutter, cut the dough in half down the length (the long side).
Brush both halves with egg wash, then sprinkle one half with the cinnamon sugar. Place the first half on top of the second half, egg wash side down. Seal together by rolling with the rolling pin.
Using a knife or pizza cutter, cut half-inch wide strips from the rectangle along the width this time (the shorter side.) Twist each strip, pinching the ends.
Place the twists on your lined baking sheet and bake for 8 – 10 minutes, or until they are golden brown. Eat and enjoy!
