Does anything scream FALL more than pumpkin dip inside a pumpkin?! I mean, it’s a double pumpkin-y treat! It takes just 5 minutes to make this delicious pumpkin spice dip that’s best served with your favorite fall cookies. You don’t NEED to display it in the pumpkin; however, taking a few extra minutes to hollow one out to place the dip inside takes it over the top and will make you the hit of whichever party you grace with your presence this fall.
I added in Cool Whip to cut the sweetness a bit and give it a lighter consistency, plus a dollop on top– but that’s optional. Here’s the secret ingredient– cream cheese frosting! You can use any brand, this is the one I chose:
As for the cookies, these start popping up every fall around here! But any gingersnap type cookie works. Actually, probably any type of cookie works. IT’S PUMPKIN SPICE, y’all.
Ingredients:
One can of Creamy Cream Cheese Frosting
1 cup pumpkin puree (I used Libby’s)
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ground ginger
1/2 cup plus a dollop of Cool Whip (optional)
cookies for dipping
Directions:
1. Mix all ingredients together in a medium bowl until well blended. No special equipment needed.
2. Carefully cut off the top of the pumpkin and hollow out the inside. Scoop out all the seeds. You can put the dip directly into the pumpkin but I liked the idea of using the bowl inside the pumpkin so I could pop it in the fridge. It took a little but of scooping and scraping until it fit, but it works!
3. Secure the pumpkin top to the pumpkin bottom using toothpicks placed halfway into the flesh on each side.
One of my favorite parts of blogging is having the excuse to whip up things like this creamy pumpkin dip on a random Monday afternoon. The kids’ eyes light up knowing they get the responsibility to be beta testers for all my recipes, and they loved this one. Even the picky one.
PS- the dip-inside-the-pumpkin idea isn’t reserved just for pumpkin dip. Try it with this homemade Ranch dip recipe surrounded by carrots, celery, and cherry tomatoes for a delicious party appetizer as well!
