Hi, this is Lauryn! When the opportunity to participate in Making Lemonade’s Summer Salad Series arose, I jumped at it.
Summer = Salads in my book.
The CSAs and Farmers Markets are flourishing, filled with fresh, local produce. Tomatoes, cucumbers, onions, lettuce, the list goes on and on. Not to mention the never-ending supply of herbs being grown to spice life up a bit. Salads are one of nature’s finest meals and I eat them all the time during this season.
I have been reading and pinning as this series has gone on and gotten some amazing new recipes to try! But of course, I’ll always have my favorites. And one of them is a Classic, Fresh Greek Salad. I heart feta more than any other food in this world (a total exaggeration – but not by much). The more the better. I often find myself enjoying this classic on a hot summer day. I hope you enjoy it too!
Classic Greek Salad:
1 head of romaine lettuce
A handful of cherry tomatoes
10 black olives, chopped
1/4 cup chopped red onion
1/2 cup crumbled feta cheese
Toss all ingredients together.
Feta Greek Vinaigrette:
1/8 cup balsamic vinegar
1/8 cup vinegar
1/2 cup olive oil
1/8 cup water
juice of 1 lemon
1/8 cup diced olives
1/4 cup crumbled feta cheese
Just before serving toss dressing into salad.
*You will have dressing left over for another salad later in the week!
