‘Lucky Leprechaun’ St. Patrick’s Day Jello Shots

Ah, I remember the days of going out on St. Patrick’s Day and pre-gaming with a round (or 3) of green tinted drinks.

Thank goodness we didn’t have cell phones back then. The photos taken with our archaic digital cameras are now tucked neatly away in a shoe box somewhere, not to be posted on the ‘gram with a ‘Bloggers Gone Wild!’ caption. 😉

While my St. Patrick’s Days may not be as rowdy anymore (I usually spend the night before helping my kids make leprechaun traps), we still enjoy celebrating with a few friends and fun flavored beverages such as these ‘Lucky Leprechaun’ Jello shots.

What sets these green jello shots apart from other drinks? Bailey’s Irish Cream is added into the recipe for an additional Irish touch.

This recipe is a true crowd-pleaser, but be forewarned: after a few of them you may be feeling the luck o’ the Irish more than usual. Take care and enjoy responsibly!

‘Lucky Leprechaun’ Rum Jello Shot Cups with Irish Cream Recipe

Prep Time: 10 Minutes

Total Time: 4 Hours

Jello Shots Ingredients:

2 boxes clear gelatin – 8 packs in each box
1 drop green food gel
1/2 cup bailey’s irish cream
1/2 cup silver rum
Water

Layered Jello Shots Instructions:

For Green Layer:

Step 1: Boil 1 cup water. In a bowl add 1/2 cup cold water and 1/2 cup rum. Whisk in 4 packs of the clear gelatin and 1 drop green food gel. Add in hot water and whisk well.

Step 2: Set out tall jello shot cups. Pour 1/2 the way with green jello. Place in fridge and let set for two hours. The jello should be set. Check by shaking the cups. If you see liquid wait another hour.

For Bailey’s Layer:

Boil 1 cup water. In a bowl add 1/2 cup cold water and 1/2 cup Bailey’s Irish Cream (or another brand). Whisk in 4 packs of the clear gelatin. Add in hot water and whisk well.

Pour Bailey’s layer over the top of the green layer. Let set for two hours in the fridge. The jello should be set. Check by shaking the cups. If you see liquid wait another hour.

Here they are, lined up and ready for the final touch!

Tip: If you want to get really fancy, you could add a layer of orange jello and make these drinks look like the flag of Ireland.
